The Duane Reade in the bus station

Introduction
I’m buying a bottle of water at a Duane Reade in Port Authority. Above the checkout counter, there’s a sign: “Uniquely New York.” Below that there’s a huge picture of a woman with a short haircut and a wide smile holding a glass of milk with the caption “How I feel: vitamins every day and prescriptions when I need them.” The milk seems to be skim—it’s slightly gray.
Ingredients
- Watermelon
- Arugula
- Halloumi
- Pepitas
- Basil
- Olive oil
- Lime
- Lime zest
- Tajin
Instructions
- Cube watermelon into bite sized chunks.
- Heat a pan and lightly cover bottom with oil.
- Slice and fry halloumi until golden. Flip to crisp all sides.
- Create a bed of arugula and watermelon on a large plater. Add halloumi.
- Zest then squeeze 1 lime on top.
- Sprinkle tajin, pepitas and torn basil.
- Drizzle olive oil.
